Simple and easy. Topped with sweet & spicy.

Ingredients:
Drys:
1 cup cornmeal (I used white cornmeal for this recipe)
1 cup GF AP flour (I use Pamela's Artisan Blend)
1 tsp ground chia seeds (or flax)
1 tsp baking powder
1/2 tsp salt
1/2 tsp onion powder
1/4 cup nutritional yeast
3 sprigs fresh thyme, zipped
Wets:
2 cups non-dairy milk (I use unsweetened almond milk)
1 tbsp apple cider vinegar
1/4 cup sunflower oil
Fo Drizzle:
2 tbsp honey (or agave if honey isn't part of your diet)
1/4 tsp sriracha

Directions:
Preheat your waffle iron
Combine dry ingredients in a large bowl
Add milk and apple cider vinegar in a glass and let sit for a minute or two to make "buttermilk"
Pour the buttermilk and oil into the dry ingredients and mix until combined

Spoon batter into your waffle maker and let cook for 5ish minutes or until golden brown
Serve warm with spicy honey, a pat of vegan butter, and more fresh thyme

Makes 4 big ol' waffles
Vicious Variations:
Try green onions or roasted red peppers in place of thyme
Cut the waffles in half and use as an amazing bread for your favorite vegan BBQ sammich!
