Waiting for dough to rise is for suckers... and people with lots of free time.
GF. V. SF. NF. (and yeast free!)
Ingredients:
3 cups GF AP flour (I use Pamela's Artisan Blend)
1 Tbsp baking powder
1 tsp salt + more for sprinklin
2 cups warm water
2 Tbsp olive oil + more for drizzlin
Fresh herbs (parsley & thyme are my favs)
Optional:
Your favorite vegan cheese (I love Miyokos mozz & smoked mozz! - this stuff does contain cashews, so pick a nut free brand if you have to avoid nuts)
Directions:
Preheat oven to 450°
Line a baking sheet with parchment
In the bowl of a stand mixer add flour, baking powder, and salt
Using the hook attachment (or use your hands if you don't have a mixer), gradually add in the warm water and oil just until the dough pulls away from the sides of the bowl
If your dough is too dry - add more warm water, if it's too wet - add a little more flour
You should end up with a pretty sticky dough
Using a silicone spatula and assistance from the parchment, press out the dough on your parchment lined pan until it's about 3/4" thick and in the shape you want it
Drizzle on the olive oil, herbs, salt, and cheese if ya please
Bake for 15-20 minutes or until golden brown
Slice & serve with pizza or marinara!
Makes about 16 big ol sticks
Vicious Variations:
Top with melted earth balance, cinnamon, and sugar for sweet sticks
